Baked Honey Mustard Pork Chops
Description
This recipe presents bone-in pork chops baked with a honey mustard glaze made from wholegrain and Dijon mustards blended with honey. The pork is seasoned with salt and pepper before being brushed with the mustard sauce and baked in an oven-proof dish. After an initial 20-minute bake, the chops are flipped and brushed with pan juices before baking again. The oven temperature is raised near the end to encourage browning without burning. This method uses the meat's own juices to maintain moisture and intensify flavor. The result is pork chops with a slightly sweet mustard crust and a tender interior.
The dish pairs appropriately with roasted vegetables or other roasted sides, as suggested. The simple glaze and seasoning highlight the natural pork flavor while adding a mild tang and sweetness. The baking technique avoids drying out the meat, producing a satisfying texture.
Care should be taken to monitor the chops during the final baking stages to prevent over-browning. No additional water is needed in the pan during cooking since the chops release enough juice. Resting the meat briefly before serving allows juices to redistribute, enhancing tenderness. Optionally, a drizzle of lemon juice after cooking adds brightness to the flavor profile.
Ingredients
- 2 pork chops bone-in
- 1 tablespoon wholegrain mustard
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- ⅛ teaspoon black pepper ground
- ⅛ teaspoon salt
- ¼ teaspoon lemon juice optional
Instructions
- Pre-heat the oven to 180 degrees Celsius (350 Fahrenheit).
- Season the pork chops with salt and pepper on both sides, and place them in an oven-proof dish.
- In a small bowl, mix the the wholegrain mustard, dijon mustard and honey, then brush the pork chops with it.
- Bake for 20 minutes, then flip the chops on the other side, and brush with some of the sauce that had formed on the pan.
- Bake for a further 15 minutes, then increase the temperature to 200 degrees Celsius (390 Fahrenheit) for the last 5 minutes, so it can get a nice colour.
- Remove from the oven, leave to rest for 5 minutes, then drizzle some lemon juice over.
- Serve with roasted vegetables of your choice.
Notes
- Oven temperatures can vary; watch the pork chops after 30 minutes to prevent overcooking or burning.
- The meat will release enough juices to prevent drying, so adding water to the pan is unnecessary.
- Increasing the oven temperature at the end gives the chops a golden color—avoid letting edges brown excessively.
