Baked Lemon Chicken
Description
This recipe starts by creating a lemon sauce from chicken broth, lemon juice, lemon zest, honey, garlic, Italian seasoning, salt, and pepper. The chicken breasts are browned in butter for color and texture, then baked in a casserole dish covered with the lemon sauce and lemon slices. Spoon-basting the sauce over the chicken during baking keeps it moist and enhances flavor.
The resulting chicken breasts have a tender interior from baking and a zesty citrus flavor balanced by honey's mild sweetness and garlic's savory notes. The lemon slices placed on top roast gently, infusing aroma and creating an attractive finish. The dish pairs well with simple sides like mashed or roasted potatoes and a green salad for a complete meal.
Olive oil can replace butter if preferred. Leftover baked lemon chicken can be sliced and added to pasta with vegetables like broccoli or asparagus for a versatile second meal option.
Ingredients
- 4 chicken breast boneless skinless
- 3 tablespoons butter
- ⅓ cup chicken broth
- 3 lemon plural
- 1 tablespoon honey
- 2 teaspoons garlic minced
- 1 teaspoon Italian seasoning
- 1 teaspoon salt
- ½ teaspoon black pepper
Instructions
- Zest 2 of the lemons to get approximately 2 tablespoons of lemon zest. Then juice the same 2 lemons to get approximately ¼ cup of lemon juice.
- Cut ends off of the 3rd lemon, then slice to get 4 full lemon slices to garnish the chicken breasts, as pictured.
- Mix chicken broth, lemon juice, lemon zest, honey, garlic, Italian seasoning, and salt and pepper in a small bowl.
- In a large skillet, melt butter over medium-high heat. Add chicken to the skillet and brown each side (about 2-3 minutes per side).
- Place chicken in a buttered 9x13 casserole dish. Pour lemon sauce evenly over chicken. Place a lemon slice on top of each chicken breast.
- Bake at 400℉ for 25-30 minutes. Every 10 minutes, remove the chicken from the oven and spoon sauce over chicken. Internal temperature of the chicken should reach 165 degrees.
Notes
- Olive oil may be substituted for butter when browning the chicken.
- Serve baked lemon chicken with mashed or roasted potatoes and a fresh green salad for a balanced meal.
- Leftovers can be sliced and combined with pasta and vegetables such as broccoli or asparagus for another dish.
