Baked Mexican Chicken

Report
Baked Mexican Chicken features chicken breasts dipped in salsa and coated with crushed tortilla chips for a crunchy, flavorful crust. The chicken is baked until cooked through then topped with shredded cheddar cheese that melts under the oven’s heat. Optional diced tomatoes can be added as a fresh garnish, making a complete and textured main dish with Mexican-inspired tastes.

Description

The recipe starts by slicing chicken breasts lengthwise. Each piece is dipped in salsa, coating both sides fully, then pressed into crushed tortilla chips for a crispy exterior. The coated chicken is arranged on a foil-lined or greased baking sheet to prevent sticking. Baking at 400°F for 15 to 20 minutes cooks the chicken thoroughly while crisping the tortilla chip crust.

After initial baking, shredded cheddar cheese is sprinkled on top of each chicken breast and returned to the oven for 2 to 5 minutes to melt the cheese. Optional diced diced tomatoes add a fresh contrasting texture and color when served.

This dish provides a satisfying balance of textures: the tender baked chicken inside with a crunchy seasoned coating outside accented by melted cheese. It can be served alongside typical Mexican accompaniments or as an easy baked dinner option with added vegetables or rice.
