Description

This recipe starts by mixing grated gouda, crumbled queso blanco, and cotija cheeses with nutmeg, cracked black pepper, and chopped cilantro, then binding the mixture with beaten egg. The cheese filling is portioned onto small flour tortillas, which are rolled tightly and secured with toothpicks. The flautas are pan-fried in vegetable oil until golden on all sides, providing a crisp exterior and melted cheese interior.

After frying, the flautas are arranged in a baking pan and baked at 350°F, topped with salsa verde and extra crumbled queso blanco. Baking melds the flavors together and warms the dish through. Ingredients

  • 8 flour tortillas 6"
  • 1 cup gouda cheese grated, smoked
  • 1 cup queso blanco crumbled
  • 1 cup cotija cheese crumbles
  • 1 dash nutmeg
  • ¼ tsp black pepper cracked
  • 2 Tbsp cilantro chopped
  • 1 egg beaten
  • 4 Tbsp vegetable oil for frying

Toppings

  • cup salsa verde
  • 2 Tbsp queso blanco crumbled
  • 1 Roma tomato seeded, cored, diced
  • ¼ cup green onion sliced

Instructions

To prepare filling

  1. In a bowl mix Gouda, queso blanco and Cotija. Add pepper and nutmeg and mix well. Stir in the cilantro.
  2. Add beaten egg to the cheese mixture and mix well.

To make the flautas

  1. Preheat oven to 350'F.
  2. Evenly divide the cheese and egg mixture onto the end of each tortilla shell. Roll up tightly to form a cigar shape, and secure with a toothpick.
  3. Heat oil, and pan fry flautas until brown on all sides.
  4. Place flautas on the bottom of a 9"x12" baking pan. Pour the Pace® Salsa Verde over the top of the flautas.
  5. Sprinkle queso blanco over the top.
  6. Bake for 15 minutes.
  7. Remove from the oven and pour ½ cup Pace® Salsa Verde on top. Sprinkle with tomatoes, green onions and drizzle with sour cream.
