Baked Mussels with Crisped Bread Crumbs

Baked Mussels with Crisped Bread Crumbs features fresh mussels opened by steaming, topped with a flavorful mixture of garlic, parsley, seasoned bread crumbs, and olive oil, then baked to form a golden, crisp topping. This method highlights the mussels' briny taste balanced by the crunchy, herbaceous crust.

Description

Small, scrubbed mussels are quickly cooked covered in a skillet until their shells open. The top shells are removed, and the mussels are arranged on a baking sheet to support each other evenly. A mixture of fresh bread crumbs, garlic, chopped flat-leaf parsley, sea salt, black pepper, and olive oil is spooned generously over the exposed mussels. Additional olive oil is drizzled for moisture and crisping.

Baking at a high temperature crisps the bread crumbs forming a golden brown crust that contrasts with the tender, juicy mussels beneath. The savory garlic and fresh herbs enhance the natural seafood flavors. The cooked mussels rest in their shells, making for an elegant presentation.

This dish serves as an appetizer or light entrée. It pairs well with a crisp white wine or crusty bread to scoop up the flavorful topping and mussel juices.

Ingredients

Servings
  • 1 cup bread crumbs from fresh or day-old white bread
  • 2 tablespoons parsley flat-leaf, chopped
  • 1 to 2 cloves garlic finely chopped
  • 1/4 teaspoon sea salt or kosher salt
  • 2 tablespoons extra-virgin olive oil plus more for drizzling
  • black pepper to taste, freshly ground
  • 2 pounds small mussels (about 4 dozen), scrubbed

Instructions

  1. Preheat the oven to 450°F (230°C). Adjust the oven rack to the top position.
  2. In a small bowl, mix the bread crumbs, parsley, and garlic. Season with salt and a few grindings of black pepper. Drizzle with about 2 tablespoons olive oil and mix until the bread crumbs are thoroughly moistened.
  3. Dump the mussels in a large skillet. Cover the skillet and place it over high heat, shaking often, until the mussels start to open. As the mussels open, move them to a roasting pan or rimmed baking sheet. (Because the mussels will be baked, they need to be heated just long enough to force the shells open.) Snap off the top shells and arrange the mussels so they support each other evenly rather than tilt to one side.
  4. Drizzle any cooking liquid from the pan over the mussels and into the shells. Spoon the seasoned bread crumbs over the mussels, packing them gently into the shells with the back of the spoon. Drizzle the mussels with a little more olive oil.
  5. Bake the mussels just until the bread crumbs brown, about 10 minutes. Serve the mussels warm or at room temperature.
