Baked Potato Recipe
Description
This method for baking potatoes starts by par-cooking the potatoes briefly before rubbing them with olive oil and kosher salt to ensure crisp, flavorful skins. The potatoes then finish in a hot oven until the flesh becomes tender. The internal texture achieves a fluffy, light quality ideal for scooping. The golden, crispy skins offer a contrasting texture and enriched flavor thanks to the oil and salt seasoning.
Baked potatoes made this way are a versatile side dish or can serve as a base for various toppings such as butter, sour cream, Greek yogurt, or fresh chives. They fit well alongside meats, stews, or as a filling lunch by themselves.
The recipe advises baking extra potatoes by adding extra cook time, and leftover baked potatoes can be refrigerated for up to four days and reheated gently in the oven or microwave without losing texture.
Ingredients
- 4 medium russet potato about 7 ounces each, or Idaho potatoes
- Extra-virgin olive oil spray
- kosher salt
- chive optional for topping
- sour cream
- Greek yogurt
- butter
- salt
- black pepper
Instructions
- Preheat the oven to 425°F and line a baking sheet with foil or parchment paper.
- Cook the potato for 3 to 4 minutes and then carefully flip and cook for an additional 3 to 4 minutes.
- Use a fork to prick a few holes into the potatoes all over. Place on the baking sheet, spritz the potato with olive oil and rub all over; sprinkle with kosher salt all over.
- For every extra potato you're making, add 1 minute for each side.
- Bake 50 to 60 minutes, or until the skin is golden and crisp and the potato is tender.
- If the potato is still hard, continue to cook in 1-minute increments until the potato is tender.
- Use a fork to fluff up the insides of the potato before adding your toppings.
- Slice open each potato. Assemble with all the fixins you like.
Notes
- Bake potatoes ahead for meal prep and reheat in a 350°F oven for about 20 minutes or microwave 1–2 minutes.
- Store leftover baked potatoes in the refrigerator for up to 4 days to maintain freshness.
