Ingredients
Tomato Sauce:
- 2 tablespoons unsalted butter
- 1 yellow onion , chopped
- 1 red bell pepper , diced
- 6 cloves garlic , minced
- 1/2 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper
- 1 teaspoon dried basil
- 1/2 teaspoon dried oregano
- 28 ounces crushed tomatoes
Vegetable Layer:
- 2 small eggplants , sliced into 1/4" slices
- 6 roma tomatoes , sliced into 1/4" slices
- 2 zucchini , sliced into 1/4" slices
- 2 yellow squash , sliced into 1/4" slices
- 2 tablespoons unsalted butter , melted
- 1/2 teaspoon kosher salt
- 1/4 teaspoon coarse ground black pepper

Instructions
- Preheat the oven to 375 degrees.
- In a large oven-proof skillet add the butter, onions and red bell pepper on medium-high heat.
- Cook for 5-6 minutes until softened then add in the garlic and stir to combine, cooking for 30 seconds.
- Add in the salt, pepper, basil, oregano and crushed tomatoes, stirring well to combine.
- In a large bowl add the eggplant, tomatoes, squash, zucchini, melted butter, salt and pepper and toss well to combine.
- In a spiral pattern add the vegetables over the top of the tomato sauce in repeating order: eggplant, tomato, zucchini, squash.
- Cover well with foil and bake for 30 minutes.
- Uncover and bake for an additional 20 minutes.
