Baked T-Bone Steak Recipe

Ingredients

  • 1 1/2 pounds T-Bone steak 1-inch thick
  • 2 tablespoons olive oil divided
  • salt to taste (I used 1 teaspoon of coarse salt and 1 teaspoon of freshly ground black pepper

  • 2 teaspoons garlic minced
  • 1 tablespoon butter unsalted
  • rosemary fresh

Instructions

  1. Take your steak out of the fridge 30 to 60 minutes before cooking to allow it to reach room temperature. Rub the steak all over with 1 tablespoon of olive oil and then season both sides with salt and pepper.
  2. Preheat the oven to 425°F (220°C).
  3. Place a cast-iron skillet over high heat for a few minutes until very hot.
  4. Add the remaining oil to the skillet. Place the steak in the pan and sear the first side for 2 minutes. Turn the steak with kitchen tongs and sear the other side for 2 minutes.
  5. Add the garlic, butter, and rosemary to the skillet and transfer the steak to the oven.
  6. For medium-rare doneness, bake the steak for 2-3 minutes until the internal temperature reaches 130°F(54°C). Use an instant-read thermometer to check for doneness. Adjust the cooking time if you target other donenesses.
  7. Transfer the steak to a cutting board. Cover it with foil to rest for about 5 minutes.
  8. Slice against the grain and serve with your favorite sides.

Notes

  • Cook your T-bone to the following internal temperature for different doneness:
  • Remember that the temperature will rise a few more degrees while resting.
  • Rare: 120°F to 130°F
  • Medium-rare: 130°F to 135°F
  • Medium: 135°F to 150°F
  • Medium well: 150°F to 155°F
  • Well done: 160°F and above
