Baked Teriyaki Chicken Recipe

Baked Teriyaki Chicken is made using boneless, skinless chicken thighs coated in a homemade gluten-free teriyaki sauce of garlic, dried ginger, honey, tamari, avocado oil, apple cider vinegar, and water thickened with arrowroot powder. The chicken bakes until tender and caramelized, then is briefly broiled for a sticky finish. The sauce balances sweetness, savory umami, and a hint of acidity.

Description

In this recipe, boneless skinless chicken thighs are coated with a homemade teriyaki sauce that combines garlic, dried ginger, honey for sweetness, tamari for saltiness and umami, avocado oil, apple cider vinegar for mild acidity, and water. The sauce is thickened with arrowroot powder, creating a smooth glaze that clings to the chicken as it bakes. Baking at 400°F cooks the chicken thoroughly while allowing the sauce to penetrate, resulting in tender, flavorful meat.

Finishing the dish under the broiler caramelizes the surface, adding a slight crispness and intensifying the sauce's flavor. This baked preparation is simpler than stir-frying or grilling but still delivers the characteristic sticky-sweet teriyaki coating. The use of tamari makes it gluten-free, and the arrowroot functions as a natural thickening agent.

The dish can be served as a main course alongside rice or vegetables. It provides a richly flavored entree with savory, sweet, and aromatic notes from garlic and ginger.

For extra sauce, mixing a half batch and cooking it to a sticky consistency with arrowroot powder creates a delicious topping to pour over the chicken when served.
