Baked Vegan Mac and Cheese

Ingredients

  • 1 ½ Cups bread crumbs Italian style
  • 1 Pound whole wheat elbow macaroni
  • 1 Cup coconut milk full fat
  • 8 Ounces cheddar cheese vegan, shredded
  • 2 Teaspoons garlic minced
  • 2 Teaspoons salt sea salt
  • 2 Teaspoons black pepper freshly ground

Instructions

  1. Preheat the oven to 350°F. Cook the pasta based on the directions included with the box then drain.
  2. In a saucepan, heat your coconut milk, garlic, salt, and pepper. Bring to a simmer and let cook for about a minute. This should take about 5 minutes total.
  3. Add about half the shredded cheese to the warm coconut milk mixture and stir until melted.
  4. In a large bowl, combine the pasta and cheese mixture and mix well.
  5. Pour the pasta mixture into a 3-3.5-quart casserole dish and spread even. Top with the rest of the vegan shredded cheese and bread crumbs.
  6. Bake for 15 minutes or until the cheese has fully melted on the top.
