Baking Recipes: Easy Brownies

This recipe creates brownies using cocoa powder, cocoa chips, and olive oil, producing a rich, slightly moist texture with a touch of chewiness. Combining granulated and powdered sugar balances sweetness and texture, while the olive oil imparts a subtle fruity note distinct from butter. The batter is baked until a toothpick shows a few moist crumbs, ensuring fudgy brownies. Cooling and storing in an airtight container keeps them fresh for up to three days or allows freezing for longer storage.

Description

Easy Brownies recipe uses common baking ingredients including granulated sugar, all-purpose flour, cocoa powder, powdered sugar, dark chocolate chips, and olive oil. Eggs bind the mixture while vanilla extract adds aromatic depth. Olive oil replaces butter or shortening, giving a unique moistness and a subtle fruity background flavor.

The method involves combining dry and wet ingredients separately, then folding the dry into the wet until just mixed to avoid overdeveloping gluten which would toughen brownies. The batter is spread evenly in a parchment-lined 8x8 pan to ensure even cooking. Baking at 325°F for 40 to 45 minutes, or until a toothpick comes out with moist crumbs rather than wet batter, achieves a fudgy center with slightly firmer edges.

Once cooled, brownies can be sliced and stored at room temperature in an airtight container for up to three days or frozen for longer preservation. Premature removal from the oven ensures moist texture rather than drying out.

Ingredients

  • cups granulated sugar
  • ¾ cup all-purpose flour
  • cup cocoa powder sifted if lumpy
  • ½ cup powdered sugar sifted if lumpy
  • ½ cup dark chocolate chips
  • ¾ teaspoon salt sea salt
  • 2 egg large
  • ½ cup extra-virgin olive oil
  • 2 tablespoons water
  • ½ teaspoon vanilla extract

Instructions

  1. Preheat the oven to 325°F. Lightly spray an 8x8 baking dish with cooking spray and line it with parchment paper. Spray the parchment paper.
  2. In a medium bowl, combine the sugar, flour, cocoa powder, powdered sugar, chocolate chips, and salt.
  3. In a large bowl, whisk together the eggs, olive oil, water, and vanilla.
  4. Sprinkle the dry mix over the wet mix and stir until just combined.
  5. Pour the batter into the prepared pan and use a spatula to smooth the top. Bake for 40 to 45 minutes, or until a toothpick comes out with only a few crumbs attached (note: it's better to pull the brownies out early than to leave them in too long). Cool completely before slicing. Store in an airtight container at room temperature for up to 3 days. These also freeze well!
