Balsamic Chicken Caprese

Ingredients
Dressing/Marinade
- ½ cup balsamic vinegar
- ¼ cup honey
- 2 tablespoon olive oil
- 2-3 garlic minced, cloves
- 1 ½ teaspoon oregano dried
- kosher salt to taste
- black pepper to taste, kosher
Chicken
- 2 chicken breast large, (around 8 oz each), cut in half lengthwise, boneless skinless
- 4 lices mozzarella cheese
- 2 cups tomatoes quartered, cherry or grape
- ¼ cup basil chopped, fresh
Instructions
- Add all the dressing/marinade ingredients to a small jar and shake vigorously to emulsify.
- Place the chicken in a shallow dish and pour over half of the balsamic marinade. Reserve the remaining half untouched to use later.
- Toss the chicken into the marinade to completely coat.
- Allow the chicken to marinate for 20-30 minutes.
- Preheat a non-stick skillet over medium heat. Add the marinated chicken and cook for around 10-12 minutes, flipping halftime. A meat thermometer inserted into the center of each breast should read 165F when the chicken is cooked through.
- Once the chicken is done cooking, top with mozzarella slices.
- Drizzle with the remaining untouched dressing and allow it to bubble for a few minutes, until the sauce reduces and the cheese is melted.
- Take off the heat and top with tomatoes and fresh basil.
Notes
- Serving size: one chicken breast
- Make sure the chicken is cooked to 165 degrees Fahrenheit. Additionally, you can use a meat thermometer.
- Alternatively, maple syrup can be used in place of honey.
- Store the leftovers in an airtight container in the refrigerator for up to four days.
- Feel free to use boneless chicken thighs.
- Substitute tofu for the chicken for a vegetarian option.
- Either grapeseed, avocado, or olive oil will work for this chicken Caprese.
- The chicken can be marinated in the refrigerator overnight.
