Balsamic Garlic Roasted New Potatoes are the perfect savory side with baby potatoes roasted in balsamic vinegar, rosemary, and garlic.

Ingredients
- 2 pounds baby new potatoes , red, white, or yellow
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoons kosher salt
- 1/2 teaspoon coarse ground black pepper
- 1 tablespoon fresh Rosemary , minced
- 2 cloves garlic , minced
Instructions
- Preheat oven to 400 degrees.
- Halve the potatoes and place them into a large bowl.
- Add the olive oil, balsamic vinegar, salt, pepper, rosemary, and garlic to the bowl, mixing well.
- Place the potatoes on a sheet pan.
- Cook for 30 minutes, then flip potatoes and cook for 20 minutes.
- Remove from the oven and toss with a drizzle of extra olive oil or balsamic vinegar if desired.
