Ingredients

  • 12-16 12-16 whole carrots scrubbed and greens trimmed
  • 1/4 1/4 cup chicken stock or broth
  • 3 3 tablespoons balsamic vinegar
  • 1 1 clove garlic minced
  • 2 2 teaspoons honey
  • 1 1 teaspoon soy sauce
  • 1 1 teaspoon Worcestershire sauce 
  • pinch red pepper flakes optional

Instructions

  1. Preheat oven to 400º F. Arrange carrots on a rimmed baking sheet.
  2. Whisk together chicken stock, balsamic vinegar, garlic, honey, soy sauce, worcestershire sauce, and red pepper flakes, if using. Drizzle over carrots. Roll carrots in the balsamic mixture to make sure well coated. Place in the oven and roast for 50-60 minutes, until fork tender and browned.
  3. Remove from oven and serve.
