Balsamic Slow Cooker Roast Beef

This slow cooker roast beef is seasoned with a sauce featuring balsamic vinegar, soy sauce, honey, Worcestershire sauce, and garlic, which infuses the chuck roast as it cooks low and slow until tender. The dish yields slices or shredded beef with a balanced tangy and savory flavor, softened texture, and a rich sauce perfect for various serving options.

Description

The Balsamic Slow Cooker Roast Beef uses a boneless chuck roast simmered in a balanced mix of beef broth, balsamic vinegar, soy sauce, Worcestershire sauce, honey, and minced garlic. The roast is either placed directly in the slow cooker or seared first to enhance flavor and color via the Maillard reaction.

Cooking on low for 6-8 hours or high for 3-4 hours produces tender beef that can be sliced against the grain or shredded. The infused sauce coats the meat, delivering a harmonious sweet and savory profile with acidity from balsamic vinegar and richness from soy and Worcestershire sauces.

The finished beef is versatile: served on sandwich rolls, over mashed potatoes, or paired with roasted vegetables. Leftovers freeze well and can be reheated gently, making this preparation suitable for meal planning.

Suggestions include making sandwiches with traditional toppings or using the beef in tacos, quesadillas, or salads. This flexibility highlights the recipe's practical and flavorful approach to slow-cooked beef.

Ingredients

Servings
  • 1 ½ - 2 lb. chuck roast boneless
  • 1 cup beef broth
  • ½ cup balsamic vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 2 tablespoons honey
  • 3 teaspoons garlic minced

Instructions

  1. Season both sides of the chuck roast liberally with salt and pepper.
  2. Place roast directly into the slow cooker; OR you can brown the roast in a skillet for added color and flavor before it goes into the slow cooker. If you choose to brown the roast first, heat about 2 T olive oil in a large skillet or Dutch oven over medium-high heat. Add roast to the hot oil and sear until dark brown on each side (about 2-5 minutes per side). Then transfer the roast to the slow cooker.
  3. In a 2-cup measuring cup, mix together all remaining ingredients. Pour over beef.
  4. Cook on LOW for 6-8 hours, or on HIGH for 3-4 hours.
  5. Remove beef from slow cooker and place on cutting board. Slice against the grain, or use two forks to pull apart beef. Return meat to slow cooker and toss with sauce in the pot.
  6. Spoon meat and sauce onto sandwich rolls, serve over mashed potatoes, or just enjoy on a plate with your favorite roasted vegetables!

Notes

  • Freeze leftover roast beef with sauce for convenient future meals.
  • Thaw overnight in the refrigerator and gently reheat in a saucepan over low heat.
  • Serve with mashed potatoes, rice, noodles, roasted vegetables, or salad.
  • Use sliced beef for sandwiches with mayo, lettuce, tomato, and Swiss cheese.
  • Shred beef for tacos, steak and cheese quesadillas, or salads with fresh vegetables and dressing.
  • Enjoy sliced beef with bread and eggs as a brunch option.
