Balsamic Vinaigrette Dressing

This Balsamic Vinaigrette Dressing blends extra virgin olive oil, balsamic vinegar, honey, crushed garlic, Dijon mustard, salt, and black pepper. The ingredients emulsify into a smooth, tangy dressing with a mild sweetness and mellow garlic flavor. It's designed for immediate use over salads or fresh vegetables, lending a balanced, rich texture and subtle spice from the mustard.

Description

The vinaigrette is prepared by combining all ingredients in a jar and shaking vigorously until emulsified, or alternatively, whisking in a bowl or blending. The mustard helps bind the oil and vinegar for a uniform dressing. The crushed garlic adds a fresh pungency that complements the sweetness of honey and acidity of balsamic vinegar. This dressing coats leafy greens and vegetables evenly, enhancing their flavors without overpowering.

If stored in the refrigerator, the olive oil may solidify, indicating the use of quality oil. Simply letting it return to room temperature and shaking the jar restores the smooth texture. Since the dressing is quick to prepare, making it fresh as needed prevents storage issues and ensures best flavor. The recipe is easily adjusted for small servings due to its straightforward mixing method.

Ingredients

Servings
  • 1 cup extra virgin olive oil
  • 1/2 cup balsamic vinegar
  • 1 tablespoon honey
  • 1 clove garlic (crushed)
  • 1 teaspoon Dijon mustard (or 1/2 teaspoon dry mustard powder)
  • salt to taste
  • black pepper to taste

Instructions

  1. Combine all ingredients in a glass canning jar.
  2. Place lid on tightly and shake vigorously for 30 seconds or until emulsified.
  3. Serve immediately over salad or fresh vegetables.
  4. Note: Alternatively, you can whisk all the ingredients in a bowl or blend together in a blender and then place in a jar.

Notes

  • If refrigerated, the olive oil may solidify; allow the dressing to warm to room temperature and shake before use.
  • To avoid solidification, make only the amount needed for each meal rather than storing leftovers.
  • This dressing is quick to prepare and can be easily scaled down for fewer servings.
