Ban Fan, Simple Rice Bowl
Description
The recipe assembles a sauce by layering oyster sauce, light soy sauce, sugar, minced garlic, chopped scallions, and cilantro in a heatproof bowl. Hot vegetable oil is heated until smoking and then poured over the sauce ingredients to meld and bloom their flavors. Eggs are fried separately in the same pan, preferably leaving the yolks soft for richness.
Cooked white rice warmed in the microwave or steamed is placed in bowls, topped with fried eggs, and drizzled with the prepared sauce. The combination yields a fragrant and savory bowl combining umami from sauce, freshness from herbs, and richness from egg.
Ban Fan is ideal for a quick meal or repurposing leftover rice for a flavorful, easy dish.
Ingredients
- 1 tablespoon oyster sauce
- 1 tablespoon soy sauce light
- 1/2 teaspoon sugar
- 1 tablespoon garlic (minced; heaping tablespoon)
- 2 tablespoons scallion (chopped)
- 2 tablespoons cilantro (chopped)
- 2 tablespoons vegetable oil (or any neutral oil)
- 2 egg
- 1 cup rice a Chinese rice bowl's worth; if using leftovers, microwave or steam to reheat, cooked
Instructions
- Add the ingredients to a medium heatproof bowl in the order listed—the oyster sauce, light soy sauce, sugar, garlic, scallion, and cilantro. If you’re making multiple servings, multiply the ingredients to prepare the number of bowls needed.
- Heat the oil in a small saucepan until it starts to smoke—for this step, you can simply multiply the quantity of oil by the number of servings and heat it all simultaneously.
- Drizzle the hot oil over the aromatics and hear it sizzle.
- Fry the eggs in the same saucepan you heated the oil in. Then add the cooked, warmed rice to the bowls, and top with the eggs. Mix well and enjoy!
