Banana Bread Mini Muffins
Description
The Banana Bread Mini Muffins recipe combines mashed ripe bananas with melted butter, sugar, an egg, vanilla, baking soda, salt, and flour to form a soft batter. Baking at 350°F in a mini muffin tin produces small muffins with a tender crumb and light browning. Optional add-ins like chopped nuts or chocolate chips can be mixed in with the flour for extra flavor and texture.
Muffins develop a moist interior from the banana while the light baking gives a slight crust on top. Their small size makes them easy to portion and serve for breakfasts, snacks, or lunchboxes.
These muffins cool on a rack before removal from the pan to prevent sticking and ensure they hold their shape. The recipe's straightforward method allows for quick assembly and baking.
