  1. Grease a large loaf pan or 3 mini loaf pans.
  2. Preheat oven to 350 degrees.
  3. In a large mixing bowl, combine the egg, mayonnaise, vanilla extract, flour, sugar, baking soda, and salt together until just combined.
  4. Add in the mashed bananas and mix until incorporated. A few clumps here and there are okay.
  5. Pour batter into prepared pan, filling about 3/4 full.
  6. Bake in oven for about 60 minutes, or 45 minutes if making mini loaf pans.
