Description
Banana Brownies use three bananas mashed with eggs, melted coconut oil, almond butter, and vanilla extract to create a flavorful batter. Coconut flour and coconut sugar add mild sweetness and density. Baking soda, baking powder, and cinnamon contribute to leavening and spice. Folding in chocolate chunks and walnuts adds contrasting texture and richness.
The batter is poured into a parchment-lined 8x8 inch baking dish, topped with reserved chocolate and walnuts, and baked at 350 degrees Fahrenheit for 25 to 30 minutes until set. Cooling on a wire rack prevents sogginess and allows the brownies to firm up.
These brownies are moderately sweet with nutty and fruity undertones, and they slice well for serving. Warm, room temperature, or slightly chilled, they make a satisfying dessert or snack.
Ingredients should be at room temperature for best mixing and texture. Lining the baking dish with parchment helps easy removal of the brownies in a slab.
Ingredients
- 3 banana 2 1/2 cups mashed
- 3 egg
- ¼ cup coconut oil melted
- ½ cup almond butter
- 1 teaspoon vanilla extract pure
- ½ cup coconut flour
- ½ cup coconut sugar
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- ½ teaspoon cinnamon
- salt pinch
- 4 oz chocolate chopped in 1/2 " chunks
- 1 cup walnuts chopped
Instructions
- Preheat the oven to 350ºF. Line a 8 x 8 " baking dish with baking paper.
- In a large bowl, combine the mashed bananas, eggs, coconut oil, nut butter and vanilla extract until fully combined.
- Add the coconut flour, coconut sugar, baking soda, baking powder, cinnamon and sea salt to the wet ingredients and mix well. Fold in the chocolate chunks and chopped walnuts using a spatula. Reserve some of the chocolate chunks & chopped walnuts for later.
- Pour the batter into the prepared baking dish. Top with the reserved chocolate chunks and walnuts. Bake in the preheated oven for about 25 - 30 minutes. A toothpick inserted into the center should come out clean.
- Remove from oven and allow to cool on a wire rack for about 10 minutes before cutting the brownies.
