For the Banana Bundt Cake

  • 6 banana medium/large, about 3 cups mashed, very ripe
  • 1 cup butter at room temperature (1 cup = 16 Tbsp, unsalted
  • 1 1/2 cups granulated sugar
  • 4 egg lightly beaten, room temperature, large
  • 1 tsp vanilla extract
  • 3 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp salt fine sea salt

For the Cream Cheese Glaze

  • 4 oz cream cheese
  • 4 Tbsp butter unsalted
  • 1 1/2 tsp vanilla extract
  • 3/4 cup powdered sugar or added to taste
  • Pinch salt
  • 3-6 Tbsp milk or added to desired consistency

Instructions

To Make the Cake

  1. Preheat the oven to 350 ̊F. Grease the inside of a bundt pan with butter then dust with flour and tap out the excess. Set the pan aside.
  2. In a mixing bowl, cream together softened butter. With the mixer on, gradually add the sugar and beat until creamed together.
  3. Un-peel banana and set them on a plate. Mash with a fork until you have the consistency of chunky applesauce. (You should have about 3 cups of mashed bananas). Add the bananas to the mixing bowl along with the eggs and vanilla. Mix until blended.
  4. In a separate bowl, whisk together flour, baking soda, and salt. Add the dry ingredients to the batter and mix until well incorporated and no streaks of flour remain.
  5. Pour the cake evenly into your prepared bundt pan and bake at 350 ̊F for 55-60 minutes or until a toothpick inserted into the center comes out clean. Remove from the oven and set on a wire rack to cool for 10 minutes then invert onto a wire rack,* remove the cake pan and cool to room temperature before applying glaze.

To Make the Cream Cheese Glaze

  1. In a mixing bowl, cream together cream cheese and butter. Add vanilla, powdered sugar and salt. Beat on medium speed until whipped and smooth, about 2 minutes.
  2. Add 3 Tbsp milk then add more, 1 Tablespoon at a time, until you reach your desired consistency.

Notes

  • Use a dark-colored 12-cup bundt pan for best baking results; adjust baking time for smaller or lighter pans.
  • Invert the cake by setting a wire rack over the pan and flipping both carefully once the cake has cooled slightly to avoid breakage.
