Banana Chocolate Chip Cake with Nutella Frosting
Description
This Banana Chocolate Chip Cake combines mashed ripe bananas, semi-sweet chocolate chips, and standard cake ingredients like butter, sugars, eggs, and buttermilk to create moist, tender cake layers. The cake batter is mixed by creaming butter and sugars, adding eggs and banana, then folding in dry ingredients with chocolate chips. It bakes until a tester comes out clean and layers are cooled before frosting.
The texture is soft and moist from the bananas and buttermilk, punctuated by melty bits of chocolate throughout. The Nutella frosting is made by creaming butter with Nutella and powdered sugar, adjusted with cream or milk to reach a fluffy consistency. This frosting spreads smoothly over the cooled cake layers, enriching the cake with a hazelnut chocolate flavor.
The cake can be served sliced as a dessert at gatherings or enjoyed with coffee or tea. The recipe notes encourage using non-stick spray and dusting pans with flour for clean layering, and the frosting can be drizzled further or topped with chocolate shavings for added presentation.
Ingredients
- 3/4 cup butter (softened)
- 1 3/4 cups sugar
- 1/2 cup brown sugar
- 3 large egg
- 2 teaspoons vanilla
- 3 Ripe banana mashed
- 2 teaspoons lemon juice fresh
- 1 1/2 cups buttermilk
- 3 cups flour
- 1 teaspoon baking soda
- 3/4 teaspoon baking powder
- 1/2 teaspoon salt
- 12 ounces chocolate chips mini, semi-sweet
Chocolate Nutella Frosting:
- 1 cup butter (softened)
- 1 cup Nutella
- 2 1/2 to 3 cups powdered sugar
- 1 to 2 Tablespoons heavy cream or milk
Instructions
- Preheat oven to 350 degrees. In a large mixing bowl, cream butter, sugar, and brown sugar for 5 minutes or until light and fluffy.
- Add eggs one at a time, mixing in between. Stir in vanilla. In small bowl, mash bananas with lemon juice. Add bananas to bowl and mix well. Stir in buttermilk.
- Add flour, baking soda, baking powder, and salt. Fold in mini-chocolate chips. Pour into greased baking pans. Use your favorite non-stick cooking spray or butter and then a light dusting of flour. I suggest using three 8-inch cake pans or two 9-inch cake pans.
- Bake for 22-26 minutes or until the center of the cake is completely baked.
- Let cool and then remove from pans.
- In a large mixing bowl, cream together butter and nutella. Add powdered sugar and whip until light and fluffy. Add cream as needed.
- Frost cooled layers with Nutella frosting. If you want more Nutella flavoring, drizzle some all over the top of the cake or sprinkle with chocolate shavings.
