  • salt ¼ teaspoon

For the Banana Filling:

  • banana ripe, mashed
  • heavy cream
  • powdered sugar ¼ cup
  • vanilla extract

For the Chocolate Ganache:

  • semisweet chocolate chips
  • heavy cream ½ cup

Instructions

Prepare the Chocolate Sponge Cake:

  1. Preheat the oven to 350°F (175°C). Line a 10x15-inch jelly roll pan with parchment paper and grease the paper.
  2. In a large mixing bowl, beat the eggs and granulated sugar together until pale and thick, about 5 minutes.
  3. In a separate bowl, sift together the all-purpose flour, unsweetened cocoa powder, baking powder, and salt.
  4. Gradually fold the dry ingredients into the egg mixture, alternating with the milk and vegetable oil. Add the vanilla extract and mix until well combined.
  5. Pour the batter into the prepared jelly roll pan and spread it out evenly.
  6. Bake in the preheated oven for 12-15 minutes, or until the cake springs back when lightly touched.
  7. While the cake is still warm, gently roll it up with the parchment paper. Let it cool completely.

Prepare the Banana Filling:

  1. In a large mixing bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
  2. Gently fold in the mashed bananas until well combined.

Assemble the Roll:

  1. Carefully unroll the cooled chocolate sponge cake and remove the parchment paper.
  2. Spread the banana filling evenly over the cake, leaving a small border around the edges.
  3. Gently roll the cake back up without the parchment paper, making sure the filling stays inside.

  1. In a heatproof bowl, combine the semisweet chocolate chips and heavy cream.

Finish the Roll:

  1. Unwrap the chilled cake roll and place it on a serving platter.
