Banana Cream Parfaits {without pre-packaged pudding mix}
Description
The recipe begins by cooking cornstarch, banana powder, sugar (or a sugar alternative), salt, eggs, butter, and milk in a saucepan, whisking until thickened into a custard. Vanilla extract is added after cooking. Separately, cream cheese is whipped until fluffy and then combined with part of the cooled custard before folding in the remaining custard. The mixture is covered with plastic wrap placed directly on its surface to avoid a skin forming and chilled for a couple hours. To assemble, spoonfuls of the banana cream filling alternate with whipped topping into serving dishes, topped off with banana slices or dried banana chips and optional chocolate chips or pieces for garnish. This results in a layered, creamy dessert with banana and vanilla flavors highlighted.
Ingredients
- 1 cup milk
- 1/2 cup granulated sugar or 1/4 cup sugar alternative
- 1 1/2 tablespoons cornstarch
- 1/4 teaspoon salt
- 2 egg large
- 1 tablespoon butter
- 2 teaspoons vanilla extract
- banana powder 1 teaspoon
- 2 ounces cream cheese block-style at room temperature, low fat is fine
- 1 1/2 cups whipped topping
- banana fresh slices or dried banana chips
- chocolate chips optional, or pieces for garnish
Instructions
- In a medium saucepan over medium heat add 1 1/2 tablespoons cornstarch, banana powder, sweetener, salt, eggs, butter and milk. Whisk ingredients until ingredients begin to boil. Reduce to low and stir until thick. Remove from heat. Add vanilla.
- In a separate bowl beat cream cheese until light and fluffy. Add 1/4 cup of filling to cream cheese mix and beat until combined. Fold in remaining filling. Cover with plastic wrap placing the wrap directly onto the surface of the filling. Refrigerate for a couple of hours.
- To assemble parfaits, add 2-3 tablespoons to the bottom of a serving dish. Top with whipped cream. Repeat layer. Top with bananas and chocolate pieces.
