Description

Banana Fritters feature mashed medium bananas mixed with milk and a dry mix of flour, sugar, baking powder, baking soda, and salt to form the batter.   • 4 medium banana
  • ¼ cup milk
  • 1 cup all-purpose flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ½ teaspoon salt
  • vegetable oil for frying

Instructions

  1. In a large bowl, mash the bananas. Mix in milk until smooth.
  2. In a separate bowl, combine flour, sugar, baking powder, baking soda and salt. Add the dry ingredients into banana mixture and stir. I just used a wooden spoon.
  3. Heat about 1 inch of oil in a deep fryer or heavy bottomed pan to 350°F (177°C).
  4. Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, about 5 minutes. You can also use a small ice cream scoop to make it easier to drop the batter in the oil. 
  5. Drain on paper towels and dust with confectioners' sugar.

Notes

  • Heat the oil to 350°F (177°C) to prevent the fritters from absorbing too much oil.
  • A small cookie scoop can help portion the batter evenly when frying.
  • This recipe yields about 12 to 15 fritters, suitable for sharing.
  • The batter can be refrigerated in an airtight container for up to two weeks but should be fried fresh; only freeze before frying.
