Banana Fritters
Description
Banana Fritters feature mashed medium bananas mixed with milk and a dry mix of flour, sugar, baking powder, baking soda, and salt to form the batter. Spoonfuls of this batter are fried in hot vegetable oil until browned on both sides, creating crispy fritters with a tender interior. They are drained on paper towels and optionally dusted with confectioners' sugar for added sweetness. Maintaining the oil at 350°F (177°C) ensures the fritters cook evenly without becoming greasy.
These fritters make for a sweet snack or dessert and can be served warm on their own or with a dusting of sugar. They are best enjoyed fresh due to frying but can be frozen uncooked.
It is recommended to use a small cookie scoop or spoon to portion the batter into the hot oil for consistent fritters. The batter can be stored in an airtight container for up to two weeks before frying.
Ingredients
- 4 medium banana
- ¼ cup milk
- 1 cup all-purpose flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon salt
- vegetable oil for frying
Instructions
- In a large bowl, mash the bananas. Mix in milk until smooth.
- In a separate bowl, combine flour, sugar, baking powder, baking soda and salt. Add the dry ingredients into banana mixture and stir. I just used a wooden spoon.
- Heat about 1 inch of oil in a deep fryer or heavy bottomed pan to 350°F (177°C).
- Drop batter by spoonfuls into hot oil, and cook, turning once, until browned, about 5 minutes. You can also use a small ice cream scoop to make it easier to drop the batter in the oil.
- Drain on paper towels and dust with confectioners' sugar.
Notes
- Heat the oil to 350°F (177°C) to prevent the fritters from absorbing too much oil.
- A small cookie scoop can help portion the batter evenly when frying.
- This recipe yields about 12 to 15 fritters, suitable for sharing.
- The batter can be refrigerated in an airtight container for up to two weeks but should be fried fresh; only freeze before frying.
