Moist, fluffy banana muffins topped with cinnamon and sugar are everything you love about banana bread in muffin form!

Ingredients
- 1½ cups all purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 3 large ripe bananas mashed
- ¾ cup sugar
- 1 egg
- ⅓ cup butter melted

- 2 tablespoons sugar
- 2 tablespoons cinnamon

Instructions
- Preheat the oven to 350°F. Prepare a muffin pan by greasing it with cooking spray or inserting cupcake liners.
- In a bowl, sift flour, baking powder, baking soda, and salt.
- In a separate bowl, mix together bananas, sugar, egg, and melted butter. Fold in flour mixture, and stir until smooth. Scoop batter into greased muffin cups. Sprinkle with cinnamon and sugar.
- Bake for 25 to 30 minutes. Bake mini muffins for 10 to 15 minutes. Enjoy!
Notes
- STORE easy banana bread muffins in an air-tight container or Ziploc bag on the counter at room temperature for up to 4 days. This can be extended for a few days if stored in the refrigerator.
- FREEZE. Put banana cinnamon muffins into a freezer-safe Ziploc bag and keep them in the freezer. Thaw on the counter or put them in the microwave to warm them up and enjoy!
