Banana Oatmeal Cookies

These banana oatmeal cookies rely on ripe mashed bananas combined with quick oats and chocolate chips to create a chewy texture with natural sweetness. The cookies are seasoned lightly with vanilla, cinnamon, nut butter, and salt to enhance flavor without overpowering the banana base. Baked until just set, they offer a soft, tender bite and are simple to prepare with minimal ingredients and steps.

Description

The Banana Oatmeal Cookies use ripe bananas mashed to a mostly smooth consistency mixed with quick oats and chocolate chips. A small amount of vanilla, cinnamon, nut butter, and sea salt contributes subtle complexity. The dough is scooped by tablespoonfuls, pressed slightly flat, and baked at 350°F for 12 to 15 minutes until the edges are set but the centers remain soft. This baking time preserves a tender texture and moist crumb characteristic of banana-based cookies.

The result is a chewy cookie featuring the natural sweetness and moisture of bananas paired with the heartiness of oats and pockets of melty chocolate chips. The spices and nut butter add warmth and depth. Ideal for a snack or a light treat, these cookies require no added sugar and are straightforward to assemble.

These cookies are good served fresh from the oven or cooled. They keep well for a few days in an airtight container at room temperature. Because of their moist nature, they can also be frozen and thawed before serving.

Ingredients

Servings
  • 2 ripe banana about 1 cup mashed
  • 1 cup quick oats
  • ¼ cup chocolate chips
  • vanilla ¼ tsp vanilla; ½ tsp cinnamon; 1 Tablespoon nut butter; pinch of sea salt
  • cinnamon
  • nut butter
  • sea salt

Instructions

  1. Preheat the oven to 350 F. Line a baking sheet with parchment paper or a silicone mat.
  2. Mash bananas using the back of a fork. You want the bananas to have a fairly smooth consistency, but a few small chunks are okay.
  3. Add in oats and gently stir until oats and bananas are fully combined and a thick dough forms.
  4. Gently fold in chocolate chips.
  5. Using a 1 Tablespoon measuring spoon, scoop mixture and place on baking sheet about 1 to 2 inches apart. Press each ball into a cookie shape and add a few extra chocolate chips on top if you prefer.
  6. Bake for 12-15 minutes.
  7. Remove from oven, let cool and serve.
