Description
The Banana Parfait features a banana-flavored pudding created by blending firm silken tofu and ripe bananas until smooth and creamy, then thickened with potato starch and brightened with lemon juice and vanilla. The addition of granulated sugar balances the flavors. Layered with crumbled cookies and slices of banana, this parfait offers contrasting textures ranging from silky pudding to crunchy cookie bits and fresh fruit.
Assembling in jars or glasses gives an attractive presentation and portion control. The layered construction alternates creamy pudding with crumbly cookies and fresh banana, providing diverse textures and flavors in each bite. Optional vegan whipped cream adds a light topping to finish.
Banana slices should be fresh to avoid browning, or frozen banana slices can be used for convenience. Leftover pudding may also be repurposed as a topping for oats or a base for vegan pies. The parfait is versatile for breakfast, dessert, or a snack.
Ingredients
- 1 carton tofu ~16-ounce, firm silken
- 2 ½ pieces banana divided, ripe, peeled
- 1 tablespoon potato starch
- 2 tablespoon lemon extract or juice of 1 small lemon
- 1 tablespoon vanilla extract
- ¼ cup granulated sugar
- 4 to 5 pieces Fat Badger Cookies your choice on flavor, crushed
- vegan whipped cream for garnish (optional)
Instructions
- Add the tofu and 2 bananas to the bowl of a food processor or high-powered blender, and process until creamy.
- Add the potato starch, lemon, vanilla, and sugar, and process for another minute.
- In each of the jars, pack a layer of crumbled Fat Badger cookies about ½-inch thick, topped with 1-inch of banana pudding, followed by a thin layer of banana slices and ½-inch of crumbled cookies, topped with another layer of banana pudding, and garnished with extra banana slices and vegan whipped cream, if using.
Notes
- Add banana or potato starch to adjust pudding thickness as needed.
- Slice bananas just before assembling to prevent browning; frozen banana slices can also be used.
- Parfaits can be served in regular glasses if mason jars are not available.
- Leftover pudding works well over oats or frozen into a vegan pie crust for another dessert.
- For a breakfast parfait, consider combining fresh berries, granola, and plant-based yogurt.
