Banana Pecan Bread is a delicious and moist bread that is made with mashed bananas and pecans. Simple to make banana bread recipe.

Ingredients
- 1 1/2 cup all purpose flour
- 1/3 cup sugar
- 1/4 cup brown sugar
- 1/3 cup butter softened at room temperature
- 4 ripe bananas
- 2 large eggs
- 1 tsp vanilla extract
- 1 tsp baking soda
- 1/4 tsp salt
- 1 1/4 cups pecans chopped

Instructions
- Preheat the oven to 350 degrees F and spray a 5X9 loaf pan with a non-stick cooking spray.
- Peel and mash the bananas in a large mixing bowl with a fork or a potato masher.
- Then mix in the butter, eggs, sugar, brown sugar, vanilla extract, baking soda and salt. Blend with a hand held or stand up mix until well combined.
- Add in the flour and mix on low speed until just combined. Be careful not to over mix.
- Then gently fold in 1 cup of the chopped pecans with a spoon or spatula and then pour the batter into the loaf pan.
- Top the batter in the pan with the remaining chopped pecans.
- Bake for 50-60 minutes until a toothpick inserted into the center of the bread comes out clean.
- Let the bread sit for 10 minutes in the pan and then transfer the bread to a wire rack to cool completely.
- Then the bread is ready to slice and enjoy!
Notes
- Wrap the leftover bread in plastic wrap and store at room temperature for up to 5 days.
