Banana Pudding Brownies

Banana pudding brownies are rich decadent brownies bursting with chocolate and banana pudding flavors. This easy homemade brownies recipe turns out perfectly chewy delicious brownies every time with hints of banana in every bite.

Ingredients

  • ¾ cup boiling water
  • 2 ounces unsweetened chocolate chopped fine
  • cup cocoa powder
  • 2 ½ cups sugar
  • ¾ cup vegetable oil
  • 2 large eggs
  • 2 large egg yolks
  • ¼ cup unsalted butter melted
  • 2 teaspoons vanilla extract
  • 2 pkgs (135g) Banana Cream Cook and Serve Pudding 6 servings, (Cooked NOT Instant)
  • 2 cups all-purpose flour
  • ¾ teaspoon salt
  • cooking spray

Instructions

  1. Get out and measure your ingredients.
  2. Preheat your oven to 350 degrees.
  3. Make a foil sling for your 13 by 9-inch baking pan by folding 2 long sheets of aluminum foil.
  4. Lay sheets of foil inside your pan perpendicular to each other, with extra foil hanging over edges of the pan. Push foil into pan corners and all the way up the sides of the pan. As smooth as possible leaning to the pan edge. Prepare with cooking spray.
  5. Add unsweetened chocolate and cocoa in a large bowl. Whisk in boiling water and stir until chocolate is melted.
  6. Add sugar, oil, eggs and egg yolks, cooled melted butter, and vanilla. Whisk until blended.
  7. Gently whisk in banana pudding mix, flour and salt until incorporated. Do not overmix.
  8. Transfer batter to prepared pan. Bake until toothpick inserted in center comes out with few moist crumbs attached, 37 to 43 minutes long, rotating pan halfway through baking.
  9. Transfer pan to wire rack and let it cool for 1½ hours. Using the excess foil around the edges, lift brownies out of the pan. Return brownies to wire rack and let it cool completely, about 1 hour.
  10. Cut into 2-inch squares and serve. Enjoy every bite.

Notes

  • Use a sharp knife to slice your brownies for the cleanest cuts.
  • Bake until a toothpick inserted in the center comes out with a few moist crumbs.
  • Make sure the oven is preheated to ensure even baking.
  • Do not overmix your brownie batter. This may lead to tough or dry brownies.
  • Use room temperature ingredients for best results.
