Description
This recipe combines instant banana cream pudding with cold milk, using an electric mixer to thicken. Separately, softened cream cheese is beaten smooth and blended with the pudding mixture for richness. Folded into this base is whipped topping, which lightens the texture. Sliced bananas, crunchy vanilla wafers, and mini marshmallows add sweetness and texture contrast. The dessert can be served right away to preserve the crispness of the wafers or refrigerated for about 30 minutes to allow the wafers to soften and the flavors to meld.
The pudding fluff highlights ripe banana flavor balanced against creamy and sweet components. Including marshmallows and wafers adds playful texture. It is best eaten the same day due to the bananas’ tendency to brown and the texture changes of the vanilla wafers over time.
Ingredients
- 5.1 ounce banana cream instant pudding mix instant
- 1 ¾ cups milk cold
- 8 ounces cream cheese softened to room temperature
- 8 ounces whipped topping thawed (Cool Whip, frozen
- 3-4 medium banana sliced
- 3 cups Vanilla Wafer or vanilla wafer crumbles, mini
- 2 cups mini marshmallows
Instructions
- In a medium mixing bowl, add the instant banana cream pudding powder and cold milk.
- Blend with an electric hand mixer on medium-low speed until it begins to thicken.
- In a separate large mixing bowl, add the softened cream cheese and beat on medium speed, beat the cream cheese until smooth. (scraping down the sides of the bowl a few times)
- Add the pudding mixture into the fluffy cream cheese and blend it together until combined.
- Add the whipped topping and gently stir with a spatula until completely combined.
- Add in the sliced bananas, mini vanilla wafers, and mini marshmallows and gently stir them in until coated fully.
- If you'd like the cookies to have some crunch, serve immediately topped with extra banana slices and nilla wafers.
- If you prefer the softer wafers, place the bowl in the refrigerator for 30 minutes then garnish with extra banana slices and vanilla wafers just before serving.
Notes
- Use ripe but not overly mushy bananas to maximize flavor without affecting texture negatively.
- For a lighter salad, substitute half the cream cheese with additional whipped topping.
- Vanilla wafers can be replaced with shortbread cookies or graham crackers depending on taste preference.
