Banana Pudding Recipe
Description
This banana pudding dessert begins with a layer of crisp Chessmen butter cookies at the bottom of a baking dish, topped with fresh sliced bananas. A creamy filling is prepared by beating softened cream cheese with sweetened condensed milk until smooth, then adding instant banana cream pudding mix and milk. The mixture is thoroughly whipped to integrate and lighten the texture. Finally, thawed whipped topping is folded in gently, creating a mousse-like consistency.
The pudding mixture is spread over the banana layer and topped with a second layer of cookies, providing contrasting textures of creamy custard, tender banana, and crunchy cookies that soften after chilling. The dessert is covered and refrigerated for at least four hours or longer to fully develop flavor and allow the cookies to absorb moisture, resulting in a luscious consistency.
Though banana cream pudding mix is typical, French Vanilla or Vanilla pudding mixes can also be used, and vanilla wafers or butter cookies can substitute the Chessmen. The dessert is best served chilled and stored covered in the refrigerator to maintain freshness.
Ingredients
- 2 packages Pepperidge Farm Chessmen Cookies
- 6 banana sliced, medium
- 1 package cream cheese 8 ounce, softened
- 1 can sweetened condensed milk 14 ounce
- 1 box Banana Cream Pudding mix 5 ounce, instant
- 2 cups milk
- 12 ounce Cool Whip thawed
Instructions
- Line the bottom of a 13x9 baking dish with one package of chessmen cookies. Top with sliced bananas.
- In a mixing bowl, beat cream cheese with sweetened condensed milk until smooth. Add in pudding mix and milk. Beat for several minutes, scraping down the sides of the bowl as needed.
- Fold in cool whip and spread over banana layer.
- Top with remaining package of chessmen cookies. Cover with plastic wrap and refrigerate for 4 hours.
Notes
- You can substitute French Vanilla or Vanilla pudding mix for the banana cream flavor if preferred.
- Vanilla wafers or butter cookies are suitable alternatives to Chessmen shortbread cookies.
- Using an electric mixer yields a smoother pudding; ensure the cream cheese is softened to room temperature for best results.
- Allow the pudding to chill at least 4 hours, preferably overnight, for optimal flavor and texture.
- Store the banana pudding covered in the refrigerator to keep it fresh.
