Banana Pudding Recipe (Magnolia)
Description
This banana pudding starts by beating sweetened condensed milk with ice-cold water and vanilla instant pudding mix, letting the mixture chill to set fully. Whipped heavy cream is folded gently into the pudding to add airy lightness without losing the dessert’s creamy structure. Layers are built in a dish with vanilla wafers, sliced barely ripe bananas, and the pudding mixture repeated three times, allowing the wafers to soften and meld with the pudding and bananas during chilling.
The balance between the creamy pudding, tender bananas, and softened wafers creates a comforting and familiar dessert often served chilled. The choice of barely ripe bananas ensures slices hold up without excessive browning or mushiness, preserving texture in the layered pudding.
To slow banana browning, selecting underripe fruit helps, and brushing slices with lemon juice or club soda offers additional protection. Chilling the dessert for at least 4 hours guarantees the pudding sets properly and the flavors marry.
Ingredients
- 1 (14-ounce) can sweetened condensed milk
- 1 1/2 cups water ice cold
- 1 (3.4-ounce) box vanilla instant pudding mix
- 3 cups heavy cream
- 4 cups banana barely ripe, sliced
- 1 (12-ounce) box nilla wafers
Instructions
- Beat the sweetened condensed milk and water in a large bowl using a hand mixer until combined. Add the vanilla instant pudding mix and beat well for 2-3 minutes, then set in the refrigerator to chill completely and set up, at least 4 hours or overnight.
- Beat the heavy cream in a large bowl with an electric mixer or stand mixer fitted with the whisk attachment until stiff peaks form. Fold the whipped cream into the chilled pudding with a spatula, taking care not to deflate the whipped cream too much but making sure everything gets mixed evenly.
- Arrange 1/3 of the Nilla wafers in the bottom of a trifle dish, 9x13-inch pan, or even individual mason jars or cups. Add 1/3 of the sliced bananas, then spoon 1/3 of the pudding over the top of these.
- Repeat the layers 2 more times, reserving a few Nilla wafers and bananas for decorating the top.
- Cover with plastic wrap and chill for at least 4 hours or up to 8 hours until set up and the Nilla Wafers have softened. You don't want to go much longer than 8 hours or the bananas will start to turn brown.
Notes
- Select underripe bananas to reduce browning after slicing.
- Brush banana slices with lemon juice or club soda to help prevent discoloration.
