Description
In the Bananas Foster recipe, butter melts with brown and granulated sugars and cinnamon to form a spiced caramel sauce. Bananas are halved lengthwise and simmered in this sauce until softened but still holding their shape. Dark rum is added and can be ignited to burn off the alcohol while deepening the flavor; this step is optional and can be omitted by simply cooking the rum in the sauce without flambéing.

Ingredients
- ½ cup butter unsalted
- ¾ cup brown sugar
- ¼ cup granulated sugar
- ½ teaspoon cinnamon
- 3 banana halved lengthwise
- 3 ounces dark rum
- Ice cream for serving
Instructions
- Combine butter, brown sugar, white sugar, and cinnamon over medium heat in a large saucepan. Cook 3-4 minutes stirring occasionally.
- Add bananas and cook until softened, about 4-5 minutes.
- Add in rum and with a long lighter, ignite rum (optional, see note). Allow the flames to burn out (about 30 seconds).
- Serve bananas over ice cream and spoon sauce over top.
Notes
- Bananas should be ripe but firm to maintain their shape during cooking.
- If you prefer not to ignite the rum, simply stir it into the sauce before adding bananas and allow it to cook together.
- For a boost of banana flavor, add banana liqueur along with the rum if desired.
- Non-alcoholic versions can use fruit juice and rum extract to mimic the flavor without flambéing.
