Bang Bang Shrimp
Description
Bang Bang Shrimp features shrimp peeled and deveined, dipped in a buttermilk, flour, and cornstarch batter before being coated in a crunchy mixture of panko breadcrumbs and spices like garlic powder, onion powder, salt, and pepper. The shrimp are shallow fried in vegetable oil heated to about 375°F to achieve a crisp, golden crust while keeping the shrimp juicy inside.
The shrimp are then quickly tossed in a sweet and slightly spicy sauce blending mayonnaise, sweet chili sauce, honey, and sriracha, which coats them evenly, offering a creamy and tangy finish. Garnishing with chopped green onions adds a fresh note.
Tossing cooked shrimp only a few at a time in hot oil preserves oil temperature, ensuring crunchiness. Leftovers can be refrigerated in an airtight container for up to three days or frozen for up to three months. Reheat gently to maintain texture.
Ingredients
Sauce
- 1/2 cup mayonnaise
- 4 tablespoons sweet chili sauce
- 2 teaspoons honey
- 1 teaspoon sriracha
Shrimp
- 2-3 cups vegetable oil
- 3/4 cup buttermilk
- 1/2 cup flour
- 2 tablespoons cornstarch
- 1 pound Shrimp peeled and deveined, raw medium
- 1 cup panko bread crumbs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- green onion optional, chopped, for garnish
Instructions
- In a medium bowl, whisk together mayonnaise, sweet chili sauce, honey and sriracha to make the sauce. Set aside.
- In a separate, large bowl, whisk buttermilk, flour, and cornstarch together.
- Stir the shrimp into the buttermilk mixture, covering evenly. Set aside.
- In a separate bowl, whisk together Panko, garlic powder, onion powder, salt and pepper.
- Place the oil into a heavy bottom pan. You want to have about 1 inch of oil in the pan. Turn the heat to medium. If you have a thermometer, you want to get the temperature to about 375 degrees.
- When the oil is heating, lightly strain the shrimp, then dredge in the panko mixture, and place in the hot oil. It only takes 1 or 2 minutes per side to be fully cooked. Fry only a few shrimp at a time or the oil temperature will drop and you won’t get a crispy texture.
- hen you remove the shrimp from the frying pan, place it briefly on a plate lined with a paper towel to absorb excess oil. Then toss the shrimp with the sauce.
