Description

  • 1 lb Shrimp tail on, peeled and deveined, extra large
  • 1/2 cup buttermilk
  • 3/4 cup corn starch
  • neutral cooking oil for frying, generic cooking oil

Sauce

  • 1/4 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1/4 tsp red pepper flakes

Instructions

  1. In a small bowl, whisk together the mayo, sweet chili sauce, and red pepper flakes. Set aside.
  2. In another bowl, toss the shrimp and buttermilk until well coated. Place the cornstarch in a shallow bowl or plate and set aside.
  3. Add 2-3 inches of oil to a large pot and place it on the stove over high heat. Heat until the oil registers 360-375°F with a deep-frying thermometer.
  4. Drain the buttermilk from the shrimp. Then, dredge the shrimp in the cornstarch, shaking off any excess.
  5. Working in batches, add the shrimp to the hot oil. Fry for 3-4 minutes, flipping halfway. Place the cooked shrimp on a paper towel-lined plate. Repeat until all the shrimp is cooked.
  6. Add the warm shrimp and Bang Bang sauce into a bowl and mix together until well coated. Serve immediately and enjoy!
