  • 2 cups cherry tomato halved or grape tomato
  • 1 black beans 14 ounce can, low sodium, drained and rinsed
  • 1 cup corn kernels thawed, frozen
  • 1/2 cup green onion chopped
  • 1 avocado pitted and diced, large
  • 4 tablespoons cilantro fresh, chopped leaves

Instructions

  1. In a large bowl, toss together the warm rice and fresh lime juice. Divide evenly and place in the four serving bowls.
