Barbecue Chicken Pizza

Ingredients

  • 2 pizza dough uncooked, prepared

Barbecue Pizza Sauce:

  • 1 tablespoon garlic minced
  • 2 teaspoons olive oil
  • 8 ounces tomato sauce
  • 6 ounces tomato paste
  • 1 tomato
  • 2 tablespoons cilantro fresh
  • 2 teaspoons basil
  • 2 teaspoons oregano
  • salt to taste
  • black pepper to taste
  • 1 cup BBQ sauce

Pizza Toppings

  • 2 cups cheddar cheese shredded
  • 2 cups mozzarella cheese shredded
  • 8 ounces pineapple tidbits or 3/4 cup diced fresh pineapple, drained
  • 2 chicken breast grilled and sliced
  • 1/4 cup cilantro fresh

Instructions

Prepare the Sauce

  1. Finely chop the fresh tomato, set aside. Sauté minced garlic in olive oil in the bottom of a saucepan. Add the fresh tomato and remaining ingredients to the pan, except the BBQ sauce. Simmer the sauce for 20 minutes.
  2. Remove from heat and stir in BBQ sauce.

Make the Pizza

  1. Roll the pizza dough onto two pizza pans or pizza stones.
  2. Spread the sauce evenly over the pizza dough.
  3. Top the pizzas evenly with cheeses and drained pineapple tidbits. Bake at 400° for 12-15 minutes.
  4. Remove pizzas from oven. Add grilled chicken slices and sprinkle with chopped cilantro. Slice and serve.

Notes

  • *This recipe can easily be halved for 1 pizza.
