Ingredients
Barbecue Chicken Quinoa Bowls
- 2 cups quinoa cooked
- 2 cups chicken breast shredded, cooked, boneless, skinless
- 3 tablespoons barbecue sauce
- 1 cup black beans drained and rinsed, canned
- 1 cup corn or fire roasted corn, frozen, defrosted
- 1 cup cherry tomatoes chopped
- 1/4 cup onion diced
Avocado Crema
- 1/2 avocado peeled
- 1/4 cup yogurt plain, Greek
- 1/2 lime juiced
- 2 tablespoons cilantro chopped
- kosher salt fresh ground, to taste
- black pepper fresh ground, to taste
- water I used 1-2 tablespoons, to thin to a drizzling consistency
- cilantro optional, extra, for garnish
- barbecue sauce optional, extra, for garnish
Instructions
- Purée the ingredients for the avocado crema in a high speed blender or food processor. Thin with water as needed until it's a drizzling consistency.
- In a bowl combine the shredded chicken and barbecue sauce until coated.
- In 4 bowls or meal prep containers, equally divide the quinoa and barbecue chicken. Top with the black beans, corn, tomatoes and onion. Garnish with cilantro and drizzle with the avocado crema.
