Basic Shortbread Cookie Dough

Basic Shortbread Cookie Dough is a simple mixture of buttery, sweet ingredients blended with flour and salt to form a crumbly dough that becomes tender cookies when baked. The dough is chilled and sliced before baking, ensuring even slices and gentle baking for delicate cookies with a crumbly texture. This dough can be made ahead or frozen, offering flexibility for baking fresh shortbread cookies anytime.

Description

This basic dough consists of unsalted butter creamed with granulated sugar and a pinch of salt until light and fluffy, then combined with all-purpose flour. The dough may appear crumbly but comes together when gathered by hand and formed into a log for chilling. Chilling firmens the dough, making it easier to slice and helping control spreading during baking.

Once chilled, the dough is sliced into rounds about half an inch thick and baked until just barely colored, producing soft and tender shortbread cookies. The cookies firm as they cool, developing a crumbly texture typical of shortbread. This method avoids overbaking, retaining tenderness.

The dough can be prepared a day in advance or frozen for later use, adding convenience for planning cookie baking sessions. Cooling cookies on the baking sheet before transferring to a rack prevents breakage while still soft.

Ingredients

Servings
  • 1 cup unsalted butter room temperature
  • 1/2 cup granulated sugar
  • 1/4 tsp salt
  • 2 cups all-purpose flour

Instructions

  1. In the bowl of a stand mixer fitted with a paddle attachment, cream together the butter, sugar, and salt until fluffy and well combined, 2-3 minutes.
  2. Add the flour and mix until the dough has come together, it will be somewhat crumbly.
  3. Transfer the dough to a work surface and bring it together with your hands until it's no longer dry and crumbly. Form into a log about 8 inches long. Wrap in plastic wrap or parchment paper and chill in the fridge for at least an hour, or until ready to bake your cookies. Note: you can make the dough the day ahead, or freeze it at this point.
  4. Preheat oven to 350°F and line a baking sheet with parchment paper.
  5. Slice the chilled dough into about 12-16 slices about 1/2 inch thick. Place them on your prepared cookie sheet and bake for about 10-12 minutes. They will still be pale, and will be quite soft until they have cooled down a bit. Allow them to cool partially on the baking pan and then transfer to a baking rack to finish cooling. Note: for a crisper cookie, slice them thinner or cook them a little longer.
