Ingredients

  • 1 tablespoon olive oil
  • 500 g ground beef see notes below, 1.1 lbs total
  • 500 g ground pork see notes below, 1.1 lbs total
  • salt to taste
  • black pepper to taste
  • 2 tablespoon ground smoked paprika or sweet paprika
  • 1 large onion diced
  • 2 cloves garlic minced
  • 1 tablespoon tomato paste
  • 600 g potato diced, 1.3 lbs or 3-4 cups
  • 1 can diced tomatoes petite diced, 14.5 oz or 400 g
  • 2 large bell pepper use red, yellow or orange bell peppers, diced
  • 2.5 cups beef broth or vegetable broth or stock, or 600 ml
  • schmand optional - to garnish, a few tablespoons Schmand, chopped parsley
  • parsley optional - to garnish, a few tablespoons Schmand, chopped parsley

Instructions

  1. Heat oil in a large pot or skillet over medium heat. Add the ground beef and pork. Season with ground paprika, salt and pepper, and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  2. Add the diced onion and minced garlic to the pot. Cook until softened, about 2-3 minutes.
  3. Next, stir in the diced potatoes, tomatoes, bell peppers, and broth.
  4. Mix in the tomato paste.
  5. Cover and cook under low to medium heat for about 20-30 minutes, or until the potatoes are tender.
  6. Adjust seasoning with salt and pepper if needed.
  7. Ladle the stew into bowls, top with a dollop of Schmand or crème fraîche, and garnish with chopped parsley (optional). Serve hot with some bread.
