Description

In this recipe, diced onion and minced garlic are sautéed in olive oil until softened. Canned black and pinto beans, drained and rinsed, are added along with BBQ sauce and smoked paprika and warmed through over medium-low heat. This creates a smoky, mildly spiced bean filling for the sliders.

Meanwhile, a creamy coleslaw is prepared by mixing shredded cabbage and sliced green onions with a dressing made from mayonnaise, honey, Dijon mustard, red wine vinegar, salt, and freshly cracked black pepper. The dressing provides a sweet-tart complement and balances the richness of the beans.

To assemble, about half a cup of the BBQ beans is spooned onto each hamburger bun, then topped with an equal amount of creamy coleslaw. The sliders can also be made into wraps by placing the bean and slaw mixture inside a large tortilla for easier eating.

Creamy Coleslaw

  • 1/2 oz. bag cabbage $0.75, shredded, approx 3 cups
  • 3 green onions $0.17
  • 1/3 cup mayonnaise $0.55
  • 1/2 Tbsp honey $0.06
  • 1 tsp Dijon mustard $0.03
  • 1 tsp red wine vinegar $0.02, or apple cider vinegar
  • 1/4 tsp salt $0.02
  • black pepper $0.03, freshly cracked

Instructions

  1. Dice the onion and mince the garlic. Add the onion, garlic, and olive oil to a large skillet and cook over medium heat until the onion is soft and translucent (about 5 minutes).
  2. Rinse and drain the pinto and black beans in a colander. Add the drained beans, BBQ sauce, and smoked paprika to the skillet with the onions and garlic. Stir to combine and then cook over medium-low heat until warmed through (stir occasionally).
  3. While the beans and BBQ sauce are heating, prepare the creamy coleslaw. Add the cabbage coleslaw mix to a large bowl. Slice the green onions and add them to the bowl with the cabbage.
  4. In a separate small bowl, make the dressing for the slaw. Stir together the mayonnaise, honey, Dijon, vinegar, salt, and pepper until smooth. Add the dressing to the bowl with the slaw mix and green onions, then stir to combine.
  5. To make the sliders, add a heaping 1/2 cup of BBQ beans to each bun, then top with 1/2 cup of the slaw. Enjoy!

Notes

  • These sliders can be transformed into easier-to-eat wrap sandwiches by wrapping the BBQ beans and coleslaw in a large tortilla.
