Description

Start by seasoning a beef chuck roast with a BBQ seasoning rub and smoking it at a low temperature (275°F) for three hours. Then, the beef is braised in beef broth covered with foil until very tender and easily shredded. While the beef cooks, thaw frozen bread loaves and prepare toppings like drained baked beans and shredded pepper jack cheese.

Each bread loaf is rolled into a rectangle, then spread with half of the beans and shredded beef, and topped with cheese. The dough is rolled up jelly-roll style and sealed, then cut into pieces and baked to golden completion. The resulting rolls combine smoky beef, slightly sweet and tangy beans, and melted cheese inside a soft, baked bread exterior.

The recipe suggests serving two rolls per person, making it suitable for filling lunches or casual dinners. The combination of ingredients provides hearty flavors and comforting textures.

  • 3 lbs beef chuck roast
  • 3 tbsp all-purpose BBQ seasoning rub
  • 16 oz beef broth Signature Select® brand
  • 2 bread dough thawed (1 lb each, frozen, in loaves
  • 28 oz baked beans drained, Signature Select® brand
  • 8 oz pepper jack cheese shredded, Lucerne® brand
  • 1 cup BBQ sauce

Instructions

  1. Season the beef chuck roast all over with all-purpose BBQ seasoning. While beef cooks, thaw 2 frozen bread loaves, about 4 hours.
  2. Heat grill or smoker to 275°F. Place beef on the grill grates in grill or smoker, and smoke for 3 hours. Remove beef from grill or smoker and put in deep pan. Pour the beef broth on top of beef, cover with foil and cook for another 2.5 hours, or until internal temperature reaches 210°F.
  3. When beef is cool enough to handle, shred and set aside. Open baked beans and drain in sieve to remove excess sauce.
  4. On a clean, floured surface, roll each loaf, one at a time, into a 10x16 inch rectangle. Top with half the beans on one half of each rolled dough lengthwise, leaving 1 inch on all sides. Top with half the shredded beef, one-third of the shredded cheese and from the long side, roll up jelly-roll style (like making cinnamon buns) starting on side with ingredients. Pinch and seal the dough. Repeat with other remaining ingredients.
  5. Cut each dough roll into 9 pieces each using a serrated knife. Place cut side down into 2 cast iron skillets and/or seasoned 9-inch pie plates. Cover with a light towel and let rise 1 hour. Preheat oven to 400°F.
  6. Brush the tops of the rolls with BBQ sauce and bake until golden brown, about 20 minutes. Top with remaining third of shredded cheese and bake for another 5 minutes. Serve with any remaining BBQ sauce.

  • Plan for about 2 rolls per serving to satisfy appetite due to rich filling.
  • Choose a sturdy bread dough that can hold the filling without tearing during rolling and baking.
