BBQ Chicken
Description
Chicken drumsticks are seasoned simply with seasoned salt or adobo and garlic powder before marinating for at least an hour to allow flavors to penetrate. A sauce is prepared by thinning BBQ sauce with yellow mustard and a bit of water for easier glazing. The chicken is then grilled over medium heat, turning frequently to brown the skin evenly without burning, and cooked through completely.
Once nearly done, the BBQ and mustard sauce mixture is brushed on the chicken, which is then cooked a few more minutes with frequent turning to achieve a glossy, flavorful coating without charring. The skin can be left on or removed based on preference, and the cooking process is conducted carefully to ensure even cooking and appealing color.
This straightforward recipe results in chicken that carries the smoky sweetness of BBQ sauce balanced by mustard's tang, suitable for backyard meals or casual dinners.
Ingredients
- 8 chicken drumstick skin on, or off
- 1 teaspoon seasoned salt or adobo seasoning, such as Lawry’s
- 1 teaspoon garlic powder
- 4 tablespoons BBQ sauce (homemade or store bought)
- 3 teaspoons yellow mustard
Instructions
- Season chicken with seasoning salt and garlic powder. Cover and marinate in the refrigerator for at least 1 hour or as long as overnight.
- In a small bowl combine the BBQ sauce, mustard and about 2 tablespoons water to thin it out.
- Preheat an outdoor grill to medium heat.
- Oil the grates and reduce heat to low. Grill the chicken, covered, turning often so they don’t burn, until the chicken is golden brown and cooked through in the center, about 18 to 20 minutes.
- Brush the BBQ sauce mixture evenly over the chicken and cook, turning a few times until golden, careful not to burn, about 2 more minutes.
Notes
- Marinate the chicken for at least 1 hour or overnight for deeper flavor.
- Use skin-on or skinless drumsticks depending on preference; both work well.
- Grill over medium heat and turn often to avoid burning and ensure even cooking.
- Adjust seasoning salt type as desired, such as using Lawry’s seasoned salt or a similar adobo seasoning.
- Brush BBQ sauce mixture near end of cooking to prevent burning the sauce while still coating chicken thoroughly.
