BBQ Chicken Nachos

BBQ Chicken Nachos are so simple to make and grilled in foil pack trays right on the grill. These are loaded with chips, ooey gooey cheese, chicken, bbq sauce and topped with your favorite toppings!

Ingredients

  • 1 large bag tortilla chips
  • 3 cups shredded rotisserie chicken
  • 1 (18-ounce) bottle BBQ sauce
  • 2 cups shredded pepper jack cheese
  • 2 cups shredded cheddar cheese
  • 1 cup diced pineapple
  • ½ Thinly sliced red onion
  • 1 Thinly sliced jalapeño
  • 1 Diced avocado
  • ¼ cup chopped fresh cilantro
  • cup thinly sliced green onions about 2 whole green onions

Instructions

  1. Preheat the grill to medium-high heat.
  2. Add the rotisserie chicken and 1 (18-ounce) bottle BBQ saucehe bottle of barbeque sauce to a medium saucepan and heat over medium heat until steaming and bubbling.
  3. Tear 4-6 pieces of the Reynolds non-stick foil into 18-inch sections. With the non-stick side facing up, fold all 4 of the edges into the center, making walls to form small foil trays. The final size should be approximately 8 x 6 inches.
  4. Fill each tray with a handful of tortilla chips. Distribute half of the pepper jack and half of the cheddar cheese evenly over the chips, followed by the BBQ chicken, pineapple, red onion, and jalapeño. Top with the remaining half of the pepper jack and cheddar cheese.
  5. Carefully place the foil trays directly on the grill. Cook for 5-10 minutes until the cheese is melted and the outer chips start to brown.
  6. Carefully remove the nacho trays from the grill with a glove or metal spatula and top with avocado, cilantro, and green onions. Enjoy immediately.
