BBQ Seitan [Brisket Or Ribs]

BBQ Seitan is a seasoned vital wheat gluten dough, mixed with nutritional yeast and spices, then kneaded, shaped, coated, wrapped, and baked. The dough mimics the texture of brisket or ribs, absorbing BBQ sauce flavor and spices applied before and after baking. The cooking process produces a firm, chewy plant-based protein with smoky, spicy, and sweet notes from the spice rub and sauce.

Description

This BBQ Seitan recipe begins by combining vital wheat gluten with nutritional yeast and part of the garlic and onion powders. In a separate bowl, water, soy sauce, and BBQ sauce are mixed, then combined with the dry ingredients to form a wet, spongy dough. After kneading and resting, the dough is stretched into a log shape resembling a meat cut.

A dry spice rub of brown sugar, chili powder, paprika, cayenne, black pepper, garlic powder, and onion powder is applied to the dough log, which is then wrapped tightly in parchment and aluminum foil. Baking at 375 degrees for about an hour cooks the seitan through, developing its firm, chewy texture. After baking, the wrap is removed and the seitan is brushed with more BBQ sauce for moisture and enhanced flavor.

The finished product can be sliced and served with additional BBQ sauce. Its rich seasoning and meat-like texture make it a plant-based alternative suitable for various meals, replicating the experience of brisket or ribs.

Cooking time depends on piece size; smaller pieces take less time while larger loaves require longer. Adjust spices to preference, especially chili and cayenne levels, to control heat and sweetness.
