Description

This Beef Barbacoa recipe starts by blending vinegar, garlic, spices such as cumin, oregano, cloves, lime juice and zest, and chipotle chilis into a smooth sauce. The chuck roast is seasoned with salt and pepper, seared on all sides to develop flavor and seal in juices, then covered with the sauce and beef broth before baking low and slow in the oven.

  • 3 tablespoons vegetable oil
  • 5 lbs chuck roast
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper coarse ground
  • 1/4 cup apple cider vinegar
  • 1 bay leaf
  • 4 garlic cloves
  • 1 tablespoon cumin
  • 1 tablespoon oregano dried
  • 1/2 teaspoon cloves ground
  • 1 lime zested and juiced
  • 3 chipotle chilis in adobo sauce
  • 2 cups beef broth

Instructions

  1. Preheat oven to 325 degrees.
  2. Add the vinegar, bay leaf, garlic, cumin, oregano, cloves, lime juice, lime zest and chilis with sauce into a food processor and process until smooth.
  3. Add vegetable oil on medium high heat, season the beef with salt and pepper and sear beef on all sides, then turn off the heat and add in the beef broth and pour over the sauce slowly (try to keep it on top of the beef).
  4. Cover and bake for 4 hours then remove from the oven and shred apart before serving.
