Beef & Bok Choy Stir Fry

Beef & Bok Choy Stir Fry pairs thinly sliced, cornstarch-coated beef with crisp bok choy in a savory hoisin and soy sauce blend. The beef is quickly browned to retain juiciness and combined with aromatic garlic, ginger, and green onions, enhancing the flavor. The dish offers tender meat and crisp vegetables tossed in a slightly thickened sauce, making it a satisfying and balanced main course ideal over rice.

Description

The beef is coated with cornstarch and soy sauce and rested to improve texture before searing in hot oil until just browned. Stir-fried aromatics including garlic, ginger, and onion whites add fragrance, followed by the bok choy stems cooked to tenderness. A sauce combining beef broth, hoisin, soy sauce, sriracha, cornstarch, and toasted sesame oil is added with bok choy greens and cooked until hot and glossy. Finally, green onion tops garnish the dish before serving.

This stir-fry balances meaty richness with vegetal freshness. The hoisin and sriracha provide sweet and spicy notes that complement the mild bitterness of bok choy. Cooking times aim for crisp-tender vegetables and moist beef to create a harmonious texture contrast.

Serving over steamed rice rounds out the dish, making it a flavorful, straightforward meal. Attention to coating and resting the beef ensures a tender bite with a slight crust from searing.

Ingredients

Servings
  • 1 pound flank steak or your favorite cut of beef, thinly sliced
  • cup cornstarch
  • 2 tablespoons soy sauce less sodium
  • 3 tablespoons vegetable oil divided
  • 1 teaspoon ginger fresh, minced
  • 2 cloves garlic finely minced
  • 4 green onions sliced, whites & greens separated
  • 4 cups bok choy whites & greens separated

Sauce

  • ½ cup beef broth or water, reduced sodium
  • ¼ cup hoisin sauce
  • 2 tablespoons soy sauce less sodium
  • 2 teaspoons cornstarch
  • 1 teaspoon sriracha or to taste
  • 1 teaspoon sesame oil toasted

Instructions

  1. Combine beef, cornstarch, and soy sauce in a bowl and toss them together. *see note Set aside to rest 20 minutes while you prepare the other ingredients.
  2. Combine all sauce ingredients in a small bowl.
  3. Heat 1 tablespoon oil to medium-high heat in a large skillet. Add half of the beef and cook just until browned, do not overcook. Remove from the skillet and set aside. Repeat with remaining beef, adding more oil if needed.
  4. Reduce heat to medium and add 1 tablespoon oil to the same pan. Add ginger, garlic, and the whites of the onions. Cook just until fragrant (about 1 minute). Add the whites of the bok choy and cook for 2-3 minutes.
  5. Stir in the sauce, bok choy greens, and beef. Cook over medium until hot and bubbly.
  6. Remove from heat and garnish with green onion tops and serve over rice.

Notes

  • Sprinkle the cornstarch and soy sauce evenly over the beef and toss to combine instead of mixing them separately to ensure uniform coating.
