Beef Burrito
Description
The Beef Burrito features ground beef cooked with onions and garlic, then simmered with tomato paste and traditional Mexican spices like cumin, chili powder, and oregano. Adding lime juice adds a fresh acidity, while water adjusts the consistency. The mixture cooks until slightly thickened and flavors meld. Warm tortillas are layered with refried beans, shredded cheddar cheese, the beef mixture, prepared Mexican rice, and sour cream before being rolled into burritos.
The combination creates a rich, hearty filling with both creamy and sharp elements from the cheese and sour cream. The beans and rice add mild texture and additional heartiness, making these burritos substantial and satisfying. Assembling while the beef mixture is warm helps melding the flavors but letting it cool slightly prevents the tortillas from getting soggy.
This recipe serves 8 large burritos, ideal for meal prep or feeding a group. They can be served immediately or wrapped and refrigerated for later. The balance of spices and lime juice brightens the meat filling, making these burritos flavorful yet approachable.
