  • 2 portion beef slow cooker pulled
  • 2 portion rice with cilantro and lime
  • 150 g iceberg lettuce shredded
  • 4 plum tomatoes diced
  • 1 avocado diced
  • 10 g cilantro finely chopped, fresh
  • 1 lime juice only
  • 2 radish sliced
  • tortilla chips (optional)

Instructions

  1. Cook the slow cooker pulled beef according to the recipe instructions. This will take 4 hours if cooking on high, or 8 hours if cooking on low.
  2. Follow the recipe for our Cilantro Lime Rice.
  3. In a bowl, mix together the tomatoes, avocado, lime, coriander and salt and pepper.
  4. Start building your burrito bowl. Add the rice, shredded beef, lettuce, tomato and avocado salsa and then top with some radish, tortilla chips and extra cilantro.

Notes

  • Leftover pulled beef is great in burritos, tacos, or sandwiches with slaw.
  • These bowls make convenient packed lunches suitable for work or on-the-go meals.
