- 2 portion beef slow cooker pulled
- 2 portion rice with cilantro and lime
- 150 g iceberg lettuce shredded
- 4 plum tomatoes diced
- 1 avocado diced
- 10 g cilantro finely chopped, fresh
- 1 lime juice only
- 2 radish sliced
- tortilla chips (optional)
Instructions
- Cook the slow cooker pulled beef according to the recipe instructions. This will take 4 hours if cooking on high, or 8 hours if cooking on low.
- Follow the recipe for our Cilantro Lime Rice.
- In a bowl, mix together the tomatoes, avocado, lime, coriander and salt and pepper.
- Start building your burrito bowl. Add the rice, shredded beef, lettuce, tomato and avocado salsa and then top with some radish, tortilla chips and extra cilantro.
